Head Chef
A unique opportunity to lead a small team connecting nature and people through food with a Modern British menu on an outstandingly beautiful nature reserve in Kent.
The right candidate for this job will share a value driven perspective and take a creative but grounded approach to creating menus inspired by the immediate environment and following the seasons closely. Working within these parameters you will have autonomy on the menu.
An outdoor wood fired kitchen is being built to launch this summer, training and support will be given to grow this aspect of the food offering.
With small cover numbers consistent quality is achievable as well as there being room to grow in areas of your interest for example planning a kitchen garden or creating a small fermentarium.
With a steady shift pattern and extra days off in Summer, including all Saturdays, a life work balance is achievable here.
You will work within a larger (small) team on the reserve which fosters a sense of a supportive community.
We are also recruiting for a sous chef at this time.
The role:
You will be responsible for the daily operation in the kitchen and the preparation and cooking of all dishes.
As Head Chef, it is your responsibility to manage full costing, GP management, rotas and menus.
You will ensure all food is produced efficiently to a high quality.
You will enjoy a busy, hands-on role where you have the opportunity to develop your leadership skills.
You will be able to train and develop your team.
We are looking for:
A self-starter with a zest for your role.
A team player who leads the kitchen and service team from the front.
Imagination and a sense of place in your cooking.
A passion for delivering great quality food.
Up to date with health and hygiene, dietary requirements and allergens.
Excellent organisational and communication skills.
Responsible for stock and cost control along with achieving GP and budgets.
Remuneration:
£42-50,000 per annum.
28 days holiday.
